I don't think you should judge knishes by the current street vendors. There might be some good ones, but with a lot of them things aren't really as hot as they should be for one thing. A lukewarm knish isn't really a fair test, I don't think. Blintzes are..incredible, but more sinful than a straight up knish. Arnie, have you ever had the sweet potato variety? I saw that advertised by a company that makes gourmet Kosher stuff. It's in NYC, but I can't recall the name.

Are we related? My mother used to burn them also. Did yours make them "from scratch" or frozen in a box from the supermarket?

In order to defrost them quickly, my mother would put the butter into the pan and dump the blintzes in with the flame on high, then forget about them. Sometimes they'd be burned on the outside and still partially frozen on the inside. Cherry or cheese, love 'em both... with sour cream.
