What does alum do to create a pickle? My mom made tons and tons of pickles throughout my childhood but I never watched what she did or helped with doing that. I think she did most cooking while my brother and I were at school so she was done with all that stuff by the time we got home every day. On the weekend, she just fixed regular meals and nothing like making pickles, cakes, pies, etc.

i think it makes them crisper. i remember biting down on one end of one of their homemade pickles and having to bear down pretty hard which built up pressure at the other end and the meat of the pickle sort of shot out the other side. so from then on i sliced them longways in quarters which took care of the pressure problem. should the pickle be inclined to do that again. but anyway, those were just the kinds of things they would just announce. 'specially my grand pop,

"see those utensils? stainless steel! no aluminum! that frying pan is CAST IRON! see that pot? STAINLESS STEEL!"

and certainly no alum in the pickles!

i remember some bad times, but also some good. (among us kids, we could share how curious we were with one another a lot of the time. a lot of things that were different to me, and i was certainly different to them)

i guess the military came in after i was there, i only remember the civil unrest (the very real struggles among the civilians)
